Salt Fat Acid Heat

I came across this cookbook in all the hype leading up to the author's Netflix show by the same name. It's my newest cookbook, so I haven't tried many of its recipes, but I read through the whole thing in one day. It is such an interesting read, if you're into cooking. Otherwise it might be a little dry. But I tried one of the easier recipes in the book and it came out amazing.

Persian Yogurt

In a small bowl submerge the raisins in boiling water. Let them sit 15 minutes to rehydrate and plump back up. Drain and place in a medium bowl. Add the yogurt, cucumber, herbs, garlic, walnuts, olive oil and salt. Stir to combine, taste, adjust salt as needed.

Chill until serving. Cover and refrigerate up to 3 days.
